smaller non conveyor oven may take twice that long which m,ay be fine
in a restaurant setting but is too slow for a busy pizzeria.

there are NSF stickers on the machine if you are in the USA and CSA

all codes of approval required by municipal,city or federal

are about to buy meets with the regulations.

not purchase
used equipment. You will have no guarantee and nowhere to return the
item or have it serviced. You may save some initial expense but the
risk is high and you could end up with a defective
piece of
equipment which you can neither return or sell.

clearance priced new items when you can. You may get a deep discount on
a quality commercial pizza oven which will still carry full
warranty.

whether to go for a new or a used product. The answer depends
on

A used commercial pizza oven could be in very good condition if it has
been lightly used. What type of business is selling the oven and why
are they selling it? You can ask the seller but you may not get a
straight answer. If the business is a pizzeria which has used the oven
heavily on a daily basis it is very likely that the oven is well worn
and they are selling because it has become unreliable. However it may
be that they just need a bigger faster cooking oven and that

old one is in good condition. If so they will probably be upfront and
will tell you this. If the oven is in poor condtion they are unlikely
to tell you this. The obvious solution to this is to get someone who is
an expert to examine the oven before purchase. Expect to pay a
reasonable fee for this service of course.
The other detriment to buying a used commercial pizza oven is that you
will have no guarantee. If the oven has faults or breaks down and
requires service or parts replaced you are on your own. If the oven is
a few years old it may even be difficult to get any
repalcement
parts for it. Take this into serious consideration and enquire at the
manufacturers as to whether they still can provide parts for the oven
you intend to purchase.
Finally be sure that you are making a worthwhile saving by purchasing a
used oven. Check the price of the same or similar new units
and
don,t pay any more than half the new price. This will compensate at
least in part for lack of a warranty.
Buying a new oven is a matter of deciding which model will fulfill your
requirements best. Consider the space available for the oven and the
amount of use youexpect to make of it. estimate the number of pizzas
you will be making and get an oven which can turn them out in the size
and in the cooking time that you require. Be sure that there is a good
warranty with the new oven of course.
